How to make Jalebi/ Funnel Cake ?

    

Jalebi/Funnel Cake recipe !


   Ingredients:


    For the Batter:

   

  1 cup all-purpose flour (maida)

  2 tablespoons gram flour (besan)

  1/2 teaspoon baking soda

  1/4 teaspoon cardamom powder

  A pinch of saffron strands (optional)

  1 cup water

  1 teaspoon lemon juice

 For the Sugar Syrup:


  1 cup sugar

  1/2 cup water

  A few saffron strands (optional)

  1/4 teaspoon cardamom powder

  1 teaspoon rose water

  For Frying:


  Ghee or vegetable oil for deep frying

  Instructions:


  1.Prepare the Sugar Syrup

 :.In a saucepan, combine sugar 

   and water.

  .Heat it over medium heat until 

   the sugar dissolves.

  .Add saffron strands and 

   cardamom powder.

  .Simmer the syrup for about 5-7 

   minutes until it reaches a one- 

   string consistency (when a drop 

   of syrup between your thumb 

   and forefinger forms a single 

   string).

  .Remove from heat, add rose 

   water, and set aside.

  2.Make the Batter:


 .In a mixing bowl, combine all-purpose flour, gram flour, baking soda, cardamom  powder, and saffron strands (if using).

 .Gradually add water and lemon juice while stirring to make a smooth batter. The  consistency should be similar to pancake batter.

 3.Heat the Oil:


 .Heat ghee or vegetable oil in a deep frying pan over medium heat. Make sure it's hot but   not smoking.

 4.Make Jalebi:



 .Pour the batter into a squeeze 

  bottle or a piping bag with a 

  small round tip.

 .Squeeze the batter into the hot 

  oil in a spiral or pretzel shape. .You can make small or large .jalebis as per your     

   preference.

 5.Fry:


 .Fry the jalebis until they turn 

  golden brown and crispy. Ensure 

  both sides are evenly fried.

 .Remove them from the oil using 

  a slotted spoon and immediately 

  dip them into the warm sugar 

  syrup.

  6.Soak:


  .Let the jalebis soak in the syrup 

   for about 1-2 minutes, ensuring 

   they are well coated with the 

   syrup.

  7.Serve:


  Remove the jalebis from the 

  syrup and place them on a plate  to cool down a bit.

  Enjoy your homemade jalebis 

  while they are still warm and 

   crispy!



  Note: Be cautious when working with hot oil. Also, handle the sugar syrup carefully as it    can be very hot. This recipe yields approximately 10-12 jalebis, but you can easily adjust    the quantities to make more.
